Live rock can come in a variety if shapes and sizes, but just because the rock you have is large and without any unique shapes doesn’t mean you have to live with that look. Thankfully, live rock is made up of a calcium-based material and it can be shaped into whatever look you want. Just take a hammer and chisel to those big boulder pieces to make smaller, more uniquely shaped rocks. Or you can glue multiple pieces together to give a more interestingly look as well. For harder, more dense rock, simple chiseling may be too laborious to waste time on, but a quick dip in an acidic solution (e.g. vinegar) help remove some of that density and make the rock more porous.
